Use:
The leaves taste like mild sweet anise and are a colorful seasoning for salads and seafood, especially grilled salmon and over sliced tomatoes, peas, or beets. Fennel seeds are used in Italian and Greek breads and sweet cakes, meatballs, spaghetti and tomato sauce, sauerkraut, sweet pickles, and apple pies.

Ornamental:
Bronze fennel produces a striking effect when planted in a perennial ornamental border. The bronze color deepens as the season wears on and maakes a lacy contrast with other flowers. Bronze fennel also attracts beneficial insects and was a favorite of Winston Churchill for his butterfly garden.

Culture:
Bronze fennel is best grown in an area protected from wind or cultivated near a fence or wall or staked. Bronze fennel is more winter hardy than most fennel cultivars. Do not plant near dill if you are going to harvest seed from either plant because the two plants will hybridize and the resulting seeds will be inferior.
